5 pounds baby back pork
ribs 1 cup ketchup 2 (2-inch) pieces fresh ginger,
3/4 cup soy sauce 4 large cloves garlic, peeled
1/3 cup oyster sauce 1/4 cup white vinegar 1 cup
firmly packed brown sugar 1/4 teaspoon salt Vegetable

Cut ribs into 5 or 6
sections. Place ribs, ginger, and garlic in a large Dutch
oven; add water to cover. Bring to a boil over medium-high
heat. Reduce heat, and simmer 45 minutes.
Meanwhile, combine brown sugar and next 5 ingredients
in a large heavyduty, zip-top plastic bag; turn bag to mix
well. Drain ribs, and place in bag with marinade. Seal bag
securely, and turn to coat fibs. Cover and marinate in
refrigerator at least 8 hours, turning bag once.
Remove fibs from marinade, reserving marinade. Place
marinade in a small saucepan; bring to a boil over
medium-high heat, and cook until reduced to I cup.
Coat grill rack with cooking spray; place on grill
over medium-hot coals (350' to 400'). Place ribs on rack;
grill, covered, 14 minutes, turning once. Serve with sauce.
